Finally I have found the proper Coconut milk
15 years since I started to use coconut milk with raw cacao and maca powders. I have tried many (more than 10) different brands over this period. Without a shadow of doubt Coconut Merchant Organic Coconut Milk is the best coconut milk I have come across. I always took 120g of the milk before adding cacao and maca. It is 85-90g now, the rest is filtered water. A lot of the true fat but not hard. At the same time it is not runny. I like its flavour. On top of that it is organic!

A great product for baking with
I usually buy a different brand for coconut milk but as it was out of stock I decided to try these cans of merchant coconut milk. I am kind of mixed on my opinion as it depends of what you are using it for. I am Paleo/ ketogenic (ways of eating) due to health reasons so I go through coconut milk really fast. These cans when opened have a thick creamy layer on the top which is brilliant for baking - this is coconut cream and is used in things like ice cream or as whipping cream. However I found that if you want the milk for making drinks with - it doesn't seem to stay mixed. I would pour the can into a jug and whisk it up - the milk and water would combine but after a while it would separate again and when keeping in the fridge the top layer would go hard so you would then have hard bits floating in the milky water (it's so hard you have to break it with a knife or spoon!). I also tried it in my bulletproof coffee and found it was really weak tasting making my drink not nice. I tried making a Paleo cheese cake with it (something that I've done before) but the again the creamy bit separated from the watery bit and I ended up with a disaster! Taste wise it's great - no funny after taste or anything. The ingredients are 50% coconut 49.5% water and guar gum. Guar gum is used as an emulsifier and stabiliser. It's derived from a bean so those who have gut issues are told to avoid it. However I suffer with Gut issues and didn't have any issues with this (probably because the amount is minute).

Great for chia pots
Delicious and high quality, but I am yet to figure out the perfect temp to keep it at. If I open it from the pantry it is 50% solid. I heat the cans up by putting in a bowl of warm water and then use the milk to make chia pots.

The worst coconut milk I’ve ever bought!
On opening the first tin (of 6), I saw that the ‘milk’ was actually about 70% water with horrible globby bits of gunk in it. Did not resemble coconut milk at all nor did it smell like it. The globs wouldn’t mix into the water so it was basically a disgusting mess. It actually looked like lumps of fat - absolutely revolting. I opened a second tin and it was the same. A total waste of money. Unfortunately I still have 4 tins of the stuff left which I think I’m going to bin. Very disappointing and I wouldn’t recommend. In fact, I’d say AVOID! It is rated one star because there is no option for zero.

Not great
Horrible, very gritty and watery. Coconut milk is meant to be creamy milk, with a thicker milk on top (as it seperates) I had to blend it to get it smooth. Tastes fine, but too much work. I would not buy again.

I've done a bit of research on coconut companies and have learned that they can claim they don't use enslaved monkeys because it's often very difficult to track and monitor sources on the ground in Southeast Asia, which makes it easy for them to make false claims. I think there's at least one wholesale coconut company that doesn't use monkeys, but as far as I know, Coconut Merchant is the ONLY coconut retailer that I believe does not use monkeys, as they state on their label, "No monkeys used in our harvesting." Anonymous sales associates can make all kinds of claims via phone for which they are not liable, but once it's in writing, on a website or a product label, a company is liable for its claims. Coconut Merchant has the following statement on its website: "Just like many of our customers, we care about all aspects of how our products are sourced. We have heard of people using monkeys to harvest their coconuts. This is a practice that we do not support. Our coconuts are harvested by trained professionals, who use specially designed tools on their impressive climbing skills to get our coconuts."
