I purchased this Classic Ikon (4086 / 12cm) Utility knife to add to my growing collection of Wusthof Classic Ikon knives. Needles to say this knife meets the same excellent Wusthof quality as my other Wusthof knives. It is light, nicely balanced and the Classic Ikon style handle means it is comfortable to hold, making prolonged use a breeze. The slightly flexible blade is surgically sharp meaning it glides through all food stuffs and it makes slicing foods such as tomatoes into extra thin slices easy. Wusthof make professional knives which are used by professional chefs the world over, including some of the more popular TV chefs, Mr Ramsey and Mr Oliver being just two, therefore I would recommend them to any enthusiastic home cook wanting to use quality kitchen tools. I started my Wusthof collection in December 2016 and at the time of writing this review on the 11 February 2017, with moderate use of my knives and using them on a wooden chopping board only, all my Wusthof knives have kept their edge without any sharpening or honing. using any knife on anything other than a wooden or plastic chopping board will blunt it in no time. Wusthof claim they grind their knives at an angle of 14° which counts for their extreme sharpness, typically European knives are ground at a less sharp 20°.Therefore if you are not someone who uses Waterstones to sharpen their knives and rely on the pull through or electric style sharpener I wouldn't recommend purchasing or using any old sharpener as it would most likely be set at the less sharp 20° European sharpening angle. There are Wusthof branded pull through sharpeners (made in China not by Wusthof) set at a 14° sharpening angle available, but customer reviews on Amazon for these sharpeners do not meet the typical excellent reviews for other Wusthof products. If you do not want to buy one of these based on their reviews I would recommend a Chefs Choice pull through or electric sharpener designed for Asian style knives. These are set at 15° and use diamond coated sharpening wheels as apposed to the tungsten wheels typically used on these types of sharpeners including the Wusthof branded sharpeners. The diamond coated type of sharpening wheel is better than tungsten, which tends to rip metal off the blade making it jagged. It is unfortunate that the Wusthof 2933 electric sharpener manufactured by Chefs Choice is only available in the USA. I know; a European knife manufacturer who's electric knife sharpener isn't available in Europe is stupid. If there is anyone in the UK reading this who has managed to buy this sharpener via import please would you leave a comment stating where you purchased it. Thank you.

There are no better knives then Wusthof knives and this is a fantastic utility knife. Really great for all purposes and while the price may seem high, when compared to other places, this was a very good deal. I am slowly building up my chef knife collection hoping to eventually have a full set of Wusthof kitchen knives and if you are looking for a good place to start, this is the best to get first (in my opinion anyway) since it really is the best "all purpose" knife. You will find yourself using if for practically everything and the blade is so sharp it makes quick work of anything and EVERYTHING
