Very Healthy AND Tasty
I discovered this just surfing YouTube. What caught my attention was that the ingredients were things that I already use or try to use and the combination just made sense. I'm not great at cooking. I'm trying to learn how to eat healthy and like it. This book comes with several meals that are just delicious and I can make enough for a meal for my family, or just make enough to portion out for lunch meals at work. I really like the 5-Minute Salmon Salad, the Peaches & Cream Oatmeal, and the Avocado Chickpea Salad. I also really like that the recipes use a lot of the same ingredients so you can mix and match to save on groceries. I'm big on trying to not waste food, so I really appreciate that aspect.

Really enjoying this book. Full of great info and recipes. Loving the colorful pages too.“Sheet pan citrus chicken with Brussels sprouts”“Easy curry noodle soup”“Berry yogurt parfait with almonds”“Garlic chickpea bowls with miso-tahini dressing”“Pistachio bars”Will all be on the menu next week. Can’t wait to try. Reviewing the recipes and ingredients, and it looks like all dishes will be amazing. The inventive flavors will definitely enhance our diet and improve our health.

Simple Easy to Follow Recipes
We all want to eat better, this cookbook offers an easy way to do so. I am a very amateur cook and yet found great easy to follow recipes and shopping lists. Tonight I made Citrus Herb Asparagus and Vegetarian Stuffed Bell Peppers, total time start to serving one hour......and a great lunch of leftovers for tomorrow. I look forward to making many more recipes from this cookbook in the future.

LOVE all author has to share!!!
This is the BEST author!!! She describes things in layman's language. The recipes are nummie & easy. This is her 2nd book, the first was even larger.

It's an alright cookbook but didn't really appeal to me as much as some other cookbooks.

Pretty good cookbook
The problem with buying a cookbook is there are often a good number of recipes that don't appeal to you or that require expensive ingredients you will only use once and only a small amount. This cookbook only has 75 recipes, and all but a handful are ones my family find appealing. And as we cook our way through this cookbook, I like how most of the ingredients are ones we already have in the house. Dinnertime is easier when you don't need to search all over or special order a particular ingredient. Plus the trouble with that is wondering whether or not the family will even eat said speciality ingredient. Something might sound good on paper, but once it's cooked an overly unique ingredient can have everyone opting for a bowl of cereal instead. So I very much appreciate how the author kept the dishes simple with common ingredients. No use cooking healthy if no one is willing to eat it!The first chapters give some basic education on how eating affects health and immunity, and why our food choices are so important. She doesn't get overly technical, though I suspect most people will skip these parts entirely. It's not that the information is horribly boring, it's just rather text booky. Most people will want to get to cooking the food rather than reading about how antioxidants can affect cell regeneration. Each recipe also has a little blurb which explains how the particular recipe is good for you. Substitution of ingredients, such as cod for salmon if you family prefers one over the other or plant-based *beef* instead of real beef, are fairly easy to make without really affecting the outcome of a dish. Having recipes that are delicious as well as versetile is, to me, the mark of an excellent cookbook. You can improvise with a dish from this book and still end up with great results rather than being stuck adhering to the instruction's last letter or the dish is ruined.I do wish there had been more than 75 recipes to this cookbook. Everything made so far has been easy to cook without hours of prep and many can be made ahead for busy nights. I love being able to get a healthy dinner on the table even after a hectic day at work rather than takeout/to-go yet again.
