Q: Will this work with the Orbit 92100 booster pump?

If you don't have pressure loss due to any added parts you should be fine! (these are rated 140 to 1000 psi, your pump is rated 160 psi)

Q: It looks like these can turn to increase or decrease flow. Do they? If I could get these and then turn two off, that would be ideal?

No, they are not adjustable. They do have a spring loaded ball valve on the end to prevent them from dripping after the pressure on the line is removed. It is an anti-drip valve to stop the nozzle from dripping and bleeding the line contents until the line is empty. They do not shut off unless the line pressure is turned off.

what type of system are you using? Working pressure is 140 psi to 1000 psi. You will not get that without an added pump. Within that range they should work fine with the spring. That's just to avoid dripping after pump shuts off.
