Can you use screws on these wood putty and hold something heavy?

I'm not really sure. The putty stays soft quite some time once applied. After it sets one should be able to use screws in the putty.

It seems that the maple color of this is too ‘red’ - could I use the pine to fill nail holes in maple veneered plywood? Would that match closer?

I would use the lightest color putty and use a stain marker to get a closer match

Is pickled oak a gray color?

kind of green ish grey I think it's been a long time since I've used the product. it's pickled oak ygat I usdd to fill a small crack in laminate floor.

Can I glue raw wood to the patched part. What kind of glue?

Yes, but remember that the putty is not the only bonding surface, I would make sure there is sufficient wood surface around the putty for bonding to other wood. It does dry quite hard but may not adhere to your glue. Try a test run first.
