Q: Can you set the depth of the seal line? 1/8" or 1/4" from edge of bag?

There isn't a "depth" setting so it will all depend on how careful you can be with hand/eye coordination. I have cut bags length wise and them make a new side seam.

Q: Would this work on construction plastic

I'm not sure what you mean by construction plastic. If you are talking about Tyvek or thick drop cloths it should have no problem at all with it.

Q: Will this seal 2 – 6 mil polyethylene?

At the right temperature and time definitely. I used 1/4” thick EVA and it was an effective bond.
