Q: Can the latch plate be removed for round latch installation?

No it cannot, I just notched my doors out (from round to rectangle)

Q: Will this product chip/peel from use over time? I bought a similar handset on Amazon that now looks awful.

still looks good. Have no chippig or even scratches. very solid.

Use a small /short Phillips head and screw the opposite handle side first . it's easy then hold down lever to screw the other screw in. a little tricky but great working and looking handles. I have them thru my entire home.
