Mind Blowingly good.
I’ve collected cookbooks for years. I’m a home chef, not a professional, but I love cooking and know my way around the kitchen. In the last several years I’ve added some excellent books to my shelf and have plenty of recipes under my belt for all occasions. But this book is different… Special.First thing, the recipes are surprisingly easy. Easy in the best way that allows the ingredients to speak for themselves.Second thing, for me the ingredient combinations and taste profiles are what makes it shine. It’s not just your average green cookbook with predictable range of flavors. The nuances of how sweet and savory are mixed pop the bubble of average and hit your palate in surprising ways.Third thing, loads of wholesome, healthy seasonally savvy choices from A-Z.My wife and I homeschool our kids. My six year old, as one of her classes, is learning how to cook with me. Every Friday we create a dish, and this is the source that we use. Later this afternoon we are making the turmeric and blueberry muffins with granola on top. Awesome!Not only is it great to have healthy choices to introduce her to, a lot of the recipes that we have tried are colorful and very fun. As finicky parents, we want her to be exposed to a range of tastes. Some challenging, some just plain delicious. This book delivers that for sure and everything we’ve tried in here is delicious! We feel it’s giving her a boost from an early age over the typical Western kids’ diet, which is generally garbage laden.Another bonus, this not only works to introduce kids to new food, the dishes in this volume are sophisticated and masterfully thought out. Many of these dishes are elegant enough for dinner parties w/ the most discerning gourmands as well as dinner at home with the family any night of the week, all year long. It’s super versatile, which is something I’ve come to appreciate with a busy family life. Particularly when you don’t have to futz too much in preparing a good meal. Last, these recipes aren’t too fussy but give ample opportunity to branch out and explore your creativity in the kitchen. Super well done and an inspiration.I learned about these guys from stumbling onto their YouTube channel. It doesn’t seem like they make videos anymore which is a pity because their videos are also beautiful. In any case, this is on my coffee table and I love picking it up to thumb through ideas for my family’s next meal.Bravo.

Creative, healthy, relatively low effort vegetarian & gluten-free recipes
As much as I enjoyed Green Kitchen Smoothies, smoothies aren't my favorite way to eat a meal, so I've really enjoyed this new book from David and Luise. So far, everything from Green Kitchen at Home has been delicious and relatively simple to make. Banana and spinach pancakes. Middle Eastern sweet potato wraps. Mushroom, goat cheese, pear and walnut fettuccine. Farinata with roasted grapes and ricotta. While some of the GK recipes make use of a food processor and high-speed blender, there are a large number of recipes that are simply chop+saute/roast/simmer/toss-together style meals.Green Kitchen at Home is written in a casual but clear enough style that these recipes are accessible to any home cook, in any sized kitchen, who is interested in cooking vegetarian/vegan/gluten-free/nut-free. There are gorgeously-styled photographs of the finished dish next to each recipe, so it's easy to see what you're making.Green Kitchen at Home doesn't call for exotic & expensive superfoods or hard-to-find ingredients. Assuming you are a vegetarian and like to cook, the odds are good that you'll already have most of what you need: an assortment of nuts, onions and garlic, a variety of spices, lots of fresh vegetables, chia seeds, eggs, avocados, quinoa, those sorts of things. There are some recipes that contain dairy/eggs, but a tip is given on the sidebar about what to substitute, and plenty of recipes that are fully vegan. Likewise, if you're nut-free, David and Luisa include tips on the side for substitutions. All of the recipes are gluten-free.Based on the tagline for this cookbook, "quick and healthy", I assumed this cookbook would be mostly focused on recipes that didn't take very long to make. While there are certainly recipes like that, there are also quite a few recipes that have lengthier ingredient lists and prep/cook times extending well past 30 minutes....even in some of the recipes that are contained in the "during the week" section. However, the majority of those lengthy ingredients lists tend to be things like spices, onion and garlic, and an assortment of vegetables. On closer inspection, the longer prep times often consist of letting your soup simmer or cooking the quinoa, so the actual active time cooking is relatively modest. Even some of the "at the weekend" recipes are simple to throw together, like the Middle Eastern cauliflower & lentil salad and the baked portobello mushrooms in white wine and vegetables.So far, I'm quite pleased with this latest cookbook from Green Kitchen at Home. It's easy to work into my regular cooking routine, all of the options are very healthy but also flavorful and interesting, and they don't cost a ton at the grocery store.

Beautiful, thoughtful meals!
I love this cookbook. Not only is it beautiful and inspiring but everything I have cooked so far has been delicious. It's thoughtful food with great ideas for adding protein and wholesome carbs to your vegetarian diet and also works really well if you don't eat dairy. The authors offer substitutions. I am not a vegetarian but wanted inspiration for consuming less meat. This is a great option. Some meals take more time but others can be quick! I already have a cabinet filled with flour alternatives and a diverse spice rack so I didn't need to buy a bunch of new and special ingredients to make these recipes work. I am very happy with my purchase!

Disappointed.
I requested this cookbook as a Christmas present and was so excited when I received it. It wasn't until I was able to sit down and look through the book that I noticed it was created incorrectly. The interior pages are upside down!! This should have been inspected before it was mailed. Disappointed.

One of my new favorite cookbooks. David and Luise are a real inspiration ...
One of my new favorite cookbooks. David and Luise are a real inspiration for everybody who wants to eat healthy and tasty vegetarian food but not fall back on only pasta dishes and standard salads heavy on cheese. Taste is most important, but recipes are also balanced perfectly to get enough protein and fiber along with flavor. Bonus: most recipes are gluten free (without anybody noticing), free of refined sugars and all can be made vegan if wanted with the tips noted in the book. This cookbook is a great tool to use for everyday cooking, with lots of tips and twist to make standard things a bit more special but not difficult. I would recommend this book to everybody!
