Q: What temperature is the best for kefir making? Will it survive 40C summer?

Yes it will but the fermentation will be very fast. I leave my kefir out only for 2-3 hours in summers. Then I put it in the refrigerator where it continues fermenting at a slower rate

Q: I hope these are live grains. Do I need to reactivate these grains after I receive?

Yes, we send Live grains with some jaggery added in it for the grains to survive in transit period. When you receive the grains and start fermenting, it may take a couple of batches to get back into the active state from the transit period.

Q: I heard that water kefir erodes enamel overtime. Any idea?

The probiotic bacterias in kefir are actually good for killing any bad bacterias in our mouth/teeth. But too much consumptiom of kefir or holding it in mouth for a longer time may cause enamel erosion because of the presence acid in it. This is very unlikely to happen as kefir is not to be drunk in abundance. But it's good to avoid holding kefir in mouth for a longer time while drinking it. Hope this answers your question.

Q: Hi I've heard kefir have about of above 20 strains but i've never seen anyone testing their kefir under microsrope to confirm it, why?

Unfortunately we don't have a lab in India that can identity all the bacteria and yeast in kefir. They just check for few specific Lactobacillus bacteria in the samples.
