Q: Two quick questions: 1. Do you need to add salt to the boil or is there enough in the seasoning? 2. How much seasoning for 1-gallon of water?

I'm not a super cajun chef, but in my opinion this stuff is PLLLLENTY salty. I typically make a sauce out of it, which means I use far less than a gallon of water. This really compares to old bay in overall usage, but a bit spicer. You could use that as a guide in surfing for recipes.

Q: is this enough for a 16 quert pot?

Each 1 lbs. bag will season 10-12lbs. of crawfish or shrimp, or 1-2 dozen crabs. Directions say nothing about the size of the pot :-)

Q: How spicy is this? On scale of 1-5, 1 not being spicy at all and 5 making your nose and eyes water.

depending on what you're use to, to my wife it is a 5 to me who is very use to spicy foods it is a 3
