Will this fit a 15.6 laptop?

Yes. I have a 17inch laptop (or 16... whichever one has the full numerical keypad. It’s the biggest anyway) and just about fits with only the corners visible under the main flap.

What’s the litre capacity?

I think the the bag is less than 15 litres, as I asked a colleague at my work place about his bag and his is bigger than this one. The information I read on the Amazon description was 22 litres, although I haven't tried to test it, pack fair amount in the bag, if this answer helps any.

Can the side pockets be easily used as water bottles or will they not stay in there? I really like this bag but there's no bottle holders

It depends on the size of your bottle as to whether or not they would stay in the outside pockets. I bought this for my grand daughter. She was into dinosaurs etc, and this bag fitted what she wanted. She put her bottle of water inside, when she went "exploring" in the woods for dinosaurs.

I’m exactly the same with backpacks, but I bought this one anyway a couple of weeks ago because I thought it looked really nice. It’s spacious inside, and the side pockets when unzipped can hold a 500ml bottle of water. Any larger bottles will need to go inside the main part of the bag. A couple of days after receiving this backpack I went out for a walk with my partner and child, and it held all water bottles (1 in the side PPs let, 2 in the main part) and all of our picnic things really comfortably. Worth noting that while all these things made the bag heavy, the straps were really comfortable
