It is JUST bamboo fiber and great for bread
I use this in my all fiber bread and it works perfectly. Was using a different brand but they added a ingredient that made it unusable for us that make bread. I am real happy with Zimmerman and hope they don't change a thing! It's fresh and wonderful 😊

Best bamboo fiber flour
I've been using Zimmermann bamboo fiber flour for a few years and it's a great quality flour. I've been low carb for about 10 years, and this flour has been a life changer for baked goods. Quality is consistent. It is expensive compared to white flour, but it's worth it to me for health reasons. A bag will last me 3 to 4 months. Rolls and cakes have a great texture. In my opinion, the taste is very good.

super low carb flour
I can't live without this product now. It's perfect for making low carb versions of recipes that use flour. I've repurchased this product three times so far. It lasts several months for me as I only use a quarter cup at a time.

Makes good biscuits
I ordered this bamboo flour after watching someone on YouTube using it to create flour to be used in Keto recipes. I found the flour to be very light in texture but did not have a particular flavor to it. Because it is light, it tends to fly all over while scooping into the measuring cup. The flour goes a long way for the price. I made the America's Test Kitchen biscuit recipe, and the result was delightful. I missed eating biscuits so much and these came so close to my homemade biscuits. The texture is dense compared to regular flour, but the biscuits were not hard. I thought the price was a bit high, but I expect the flour will go a long way before I have to order more.

Zimmermann Bamboo Fiber
Zimmermann Bamboo Fiber is the bomb! It makes my flour light and feels and taste like regular flour. I am having to order more. Victoria keto kitchen on YouTube said she only use Zimmermann Bamboo fiber. It is well worth the money in my opinion.

Buy It For the Cupcakes
I discovered bamboo fiber on Victoria's Keto Kitchen on YouTube. I used to make Victoria's perfected flour with oat fiber and almond flour (along with some other ingredients). The cupcakes, and biscuits were excellent with that flour. Then she introduced the bamboo fiber. I made the perfected keto flour with 1/3 oat flour to 2/3 bamboo flour. I mainly did this to start using up the oat fiber. I don't like the pecan version, so I continued with the almond flour one. Then I made her vanilla birthday cake into cupcakes. WOW! It was absolutely delicious. The cupcakes were moist, but not soggy, and the crumb was delicate. I used a combination of xylitol, monkfruit and allulose as the sweetener. My husband couldn't tell that the cupcakes were sugar-free and low carb. They sort of remind me of Hostess Twinkies' cake. I haven't made the flour with all bamboo flour, and I won't until I'm out of oat flour. But I don't know if the cupcakes could possibly taste any better. If nothing else, buy this flour for the cupcakes. Update: I made strawberry scones using the Victoria's flour (still 2/3 bamboo flour and 1/3 oat fiber) and All Day I Dream About Food scone recipe. Oh my gosh! So good. My non-keto relatives were impressed and had no problem gobbling them up. The texture was just right, a bit dense like a scone should be, but soft and buttery. And I can't even get started on the waffles and pancakes made with Victoria's flour. They taste so much like wheat pancakes and waffles, that when I make a batch for the week, my kids keep stealing them.

During a chat with my PSW (Personal Support Worker), she inquired about the Bamboo Fiber I had on my storage shelf of my flour substitutes. I explained what this product was and how I had used it during my low carb, keto, ketovore stage of my diet. I had used it mainly for making breads, cookies, pies and on occasion used it to thicken gravies. In order to better explain, I came to Amazon to see if I could show her the product. That's when I found out I could actually buy it here. So, I bought it for her to try in her home as I still have 1/2 bag left of mine. The advantage of this product is that all the carbs are fiber. There is no taste or aftertaste which means that it does not influence the way things taste after cooking. Now, I wouldn't bake with this product alone. It definitely needs to be in a blend of alternative, non-glutenous flours but I also don't see any reason why someone couldn't try adding it to any of the glutenous flours either especially if someone is looking to increase their fiber intake. So using Bamboo Fiber makes it the best of both worlds - those who have no dietary restrictions and those who do. With the holiday season upon us, I think I may break my heavily meat based diet and make a few keto treats for myself. I am thinking shortbread cookies & lemon squares and maybe bread.

Expensive but it makes the best bread. I use Victoria's bread flour recipe.

I bought this Bamboo cause of its quality. It was to make "Victoria's Keto Flour" which she uses in her mix flour. Mixture comes out to 3 carbs per cup! It's also gives you the bread, cakes etc texture you're looking for. Good stuff.
