Best Kitchen Knives for the Cost
Mercer’s “Millennium” series of kitchen knives are arguably the best performance/price ratio knives on the market.They’re always ground very thin for high-performance cutting and excellent functionality in the kitchen, the steel is quite basic and easy to grind/sharpen, though it will be (slightly) prone to burr formation because it’s somewhat soft/high-retained austenite, and the handles are very ergonomic, durable, and easy to clean.I would recommend these to everyone, from professional chefs to people who utterly abuse and neglect their kitchen knives. They don’t cost much, they cut very well, and they’re easy to maintain.Get one, get a few, they’re very good kitchen knives.

Love this knife
Perfect size like I hoped. Arrives sharp so be careful! Quality steel and easy to clean. Handle feels good in the hand and is non-slip. Blade thickness is just right for slicing and cutting. I like this tool for performing Chef’s knife duties without big knife cleanup.

Feels good in hand & is very sharp!
I haven't chopped with this yet but know it will be perfect for chopping vegetables...which I do a lot!I love the handle & size of the blade.Lets chop some vegies!

Great starter
This is the first Mercer I’ve bought for home use after years of using them as “house knives” at work and the quality you get for the price tag is unbelievable. The metal is on the softer side so keep a honing rod near by but the 6” pictured above is nimble, versatile, razor sharp out of the box. The weight makes the blade like more of an extension of your hand to aid in more precise work while also having the durability to tackle the tougher tasks involving bones or squash. Long story short if you need a “I can’t believe it handled all that” type of knife, you found it with the millennia line as a whole.

Sharp and handy
Don't waste your money on the high-end knives out there unless you want to brag and impress your friends. These work great, are super sharp, and feel wonderful in your hands even if they are wet.

Really nice knife!
My husband is a knife snob and was derisive of this purchase. Now it is his go-to knife when a paring knife is too small and a butcher's knife too big. Great quality and performance for a reasonable price.

Newest addition to my favorite kitchen knives.
My most often reached for kitchen knife is not an 8" chef's, although, I would recommend that as an essential starter purchase before other knives including this one.What a great and nicely sized knife this is. Perhaps it doesn't need to be as "tall" as it is (blade to spine at the heel), but I love it. A great go to size for slicing/chopping veggies or whatever. Such a grippy, easy to hold handle too. It's not heavy and feels well balanced. No issues yet from dishwashering it, although I believe the manufacturer says not to. Like I said, it's a new favorite.Just beware (I mean it!), this knife is razor sharp and it will be so easy to slice fingertips off. Go slow getting used to the feel of cutting with it.

My new most favorite knife
It's like an 8" Chefs knife, just quicker, works like a Ferrari, I think because the length isn't getting in your way. Super sharp grind angle, and easily resharpened. The handle is just like my old fav, which was an 8" Victorinox Fibrox pro. Almost identical hand fitting, no slip grip.My plan is to look at Mercer for all of my knife needs going forward. It's refreshing having good tools in the Kitchen, and not having to spend an arm and a leg to get them.
