By adding different ingredients—water, sugar and seasoning—tapioca balls can be made to vary in color and in texture. Tapioca balls are typically neutral in flavor and gel easily, making it often used as a thickening agent in foods like pudding. Basic Recipe Bring 4 cups of water to a boil. Add 1 cup of tapioca pearls, stir and bring back to the boil. Reduce heat to a simmer and cook, stirring often, until the pearls are translucent. The tapioca pearls never cook all at the same time. Some will still have an opaque center when most are fully translucent and that is OK. Take the pan off the heat when most of the pearls are translucent. Strain off the water. Finally, rinse the cooked tapioca pearls in cold water and use as your recipe directs.
