Best Boiled 10 Mins+, Not Mushy or Sticky, Good Plant Option
Our daughter is vegan and wants to limit processed carbs so we try to cook plant-based pasta dishes she can eat, and ideally us as well. We have tried several in the past which she mostly hated because often times they wouldn't hold their shape, would be gummy, taste funny, were mushy, or super hard at the other end of the spectrum. And I can cook all kinds of dishes, so I'm aware of lengths of time to boil and how to check if done. These required a little tweaking if you don't want too hard of a noodle with a little crunch - they remind me of the consistency of bamboo shoots found in many Asian dishes. I was a little worried if I boiled too long, they would become too soft, but I soon discovered it would be hard to cause that to happen even if you tried. You can boil these a long time and they remain firm. So I boiled them about 7 minutes, and I think they could have gone a little longer like 10 minutes easily. I would have liked them a little softer, but as part of a vegetarian, vegan, or any meal these can work really well. They only make about 2 small servings, but I was happy to see that they are responsibly harvested so both a healthy and sustainable option. In the photo I attached, I boiled them with some mushrooms just to kill two birds with one stone, took the photo without the other ingredients so you could see the noodles well, and then I added a homemade pasta sauce with tomatoes, herbs, and garlic (added cheese for my serving) and the dish turned out delicious. This is definitely a good viable plant-based substitute for typical high-carb glutenous pasta.

I love Palmini! You do need to boil the linguine for a while to soften it up.

Is it pasta? No. Is it tasty and texturally pleasing? Most Definitely!
I should preface this review by saying I'm a big fan of hearts of palm. I can eat them right out of a jar. So this product intrigued me from the start. And given realistic expectations, it did not disappoint. I created a tasty "pasta" dish using these noodles, some quality jarred tomato sauce, and vegan sausage. I rinsed the noodles well, but I did not soak them in milk (as they suggest to get rid of the palm taste). I like the palm taste and really, once you add other ingredients to your dish, the taste moves way to the background. As you can see from the photos, they are the shape of linguine, however, each piece is only about 4 inches long. They remain firm, giving something close to a pasta al dente feel in your mouth. And sauce sticks to them. I found them more tasty than say zucchini noodles, but not as tasty as lentil or garbanzo bean noodles. Hearts of palm are basically water, so if you want some real nutritional value you're going to have to add a protein and some good fats, like I did with the vegan sausage. In this context, they are an excellent wheat pasta substitute. They are however, expensive. Each package is maybe 2 servings if the pasta is not the main. For me, it was one big serving.

Reasonable Pasta Substitute but TOO HIGH pon Amazon
I was pleasantly surprised with this low-carb pasta substitute. It is made from hearts of palm. It has the consistency of pasta (more or less) and tastes quite good — make certain to rinse it thoroughly as directed before heating, though, because otherwise there is an acidy aftertaste. My problem is that the package says 3 servings when in reality, it is barely 2 servings and it is $6.98 on Amazon. And that is way too expensive for what you get. I would not buy it again. But a brief search shows that it is $3.99 (pkg) or $2.99 (can) as linguine on Instacart and through/at Sprouts Farmers Market. So I first thought to buy it using one of these other venues. But I’m too disappointed in Amazon and in Palmini for what I consider price gouging. Especially Palmini. So overall not planning to buy any Palmini products again. Is this how you use a SHARK TANK endorsement? And please don’t play up the free shipping card. Other sites also have free shipping.

Tastes great and no guilt
Really like this palm based alternative to wheat pasta. I can enjoy a couple of homemade meatballs and a ladle of my killer instapot spaghetti sauce without feeling guilty. You can literally eat almost as much of this as you want with only 10% of the calories of wheat pasta. I sometimes eat it right from the pouch with sauce or salads. Just drain, rinse, drain and a quick healthy meal. Seems to stick with you and feel satisfied longer than with regular wheat past as well.has tiny hint of vegetable taste to it (like a mung bean sprout), but hardly anything much after you rinse. Sort of like zucchini but firmer.Trying to shed some winter weight so really appreciate. Really like this. Yum.....

Buy it!
These are great! Use them for any dish where you usually use noodles or pasta, but with a fraction of the calories and carbs! Just make sure you rinse them really well first. Such an awesome find! I use them all the time!

Yay! The best keto substitute for pasta that I have found!
While I enjoy the spiralized zucchini and other veggies, or spaghetti squash, they still taste like a vegetable. I love most vegetables, but when I want pasta, I really prefer it to not taste like something else. I saw a review for the Palmini pasta and decided to give it a try. I LOVE IT! There really is no obvious flavor to it, but it offers a vehicle for your sauce to cling to that is very similar to pasta. Last night I made a simple alfredo sauce with the Palmini linguini that was soooo good and reminiscent of a real pasta dish. For anyone interested, I boiled about 3 cups of water with a little salt, drained the Palmini and added it to the boiling water. Let it cook just long enough to heat it through then drain. In the same saucepan melt a couple Tbsp butter and add a Tbsp minced garlic plus about 3 Tbsp heavy cream. Stir to combine then add the Palmini back to the pot, toss until well coated with the liquid, then add about 1/2 cup of freshly grated Parmesan Cheese. Continue tossing until the cheese has melted and coated all the pasta. It is ready to serve! I had some precooked shrimp so I tossed it into the same saucepan with a little butter to heat it up and added to the top of the Palmini Alfredo plus a sprinkle of parmesan. Delicious!!! and the entire can with all additional ingredients is less than 8 net carbs but this is enough for 2 servings. Bon appetit!

Tastes good but has a unique texture
I’ve purchased this a couple of times because it’s one of the better low-carb pasta options I’ve found. It’s definitely not the same as traditional pasta, but once prepared properly and paired with a good sauce, it makes a satisfying meal. What I like most is that it’s keto-friendly, gluten free, and really easy to prepare—just drain, rinse, and heat. It works well in stir-fries, pasta salads, and with creamy sauces. The texture is a little on the firmer side, so if you’re expecting soft pasta you might need to cook it a little longer. It’s filling, low calorie, and a great alternative if you’re watching carbs. For me, it’s become a pantry staple, but I’d recommend managing expectations—it’s a substitute, not a replica of regular noodles.
