what is the use by date on the cans?

Use by date was just two months after delivery date. Not good.

Are these chiles seeded?

There may have been a few seeds, but you would be hard put to find them. The chiles are chopped up.

Are these 'Hatch chiles', as in : From the Hatch region of NM? Or, are these non-Hatch chiles sold under the 'Hatch' brand?

These are Hatch green chilies from Hatch, New Mexico. From Hatch Green Chili Company, distributed out of Albuquerque, NM...

Are these organic or non-GMO?

There is nothing on the can that says either organic or non-gmo. However, when I want really good green chilis, I always get Hatch. They come from Hatch, N.M. They're the best.
