Q: I have an 8 plus iPhone and can't get the holder to fit my phone has anyone else had this issue & if so is there anywhere to buy a holder that fits?

if you twist the little roller at the top it opens the space up wider or smaller to fit any size phone landscape(horizontally) if you want to use your phone portrait(vertically) then loosen the leaver at the back so you can rotate the phone while in the holder.

Yes, that's what it is for. Just make sure you have a 'slot' at the 6 o'clock position on your ring light and you're good to go.
