Better than I has initially thought
My original review said only “Good enough for some things. Very thin liquid.”Fast forward a few months and I’ve tried many other more expensive brands. And have come to the conclusion that, overall, THIS is the best for all around use. It’s thin; that is true. But it has a better flavor profile than many more expensive brands.

Delicious balsamico Premio from Giusti made in Italy
This balsamic does not contain caramel or any colorant, and it is thicker than the basic supposedly AOC balsamic vinegars one can find at a low price. This one might be a little bit more expensive ( I advise you to buy the lot of 4 less onerous), but it is worth it. The Giusti have several collections of balsamic vinegars, and they are much better than this one, but out of my budget. Briefly, this balsamic company is one of the oldest in Modena. You need time to make a balsamic vinegar and that is why some of them are thick like a syrup after having rest for decades in an old cask. They are delicious and you just need a drop to enjoy them.; just like old cognacs and eaux de vie. It explains the high price. It explains why others put caramel in theirs as a subterfuge to imitate the old ones color; yet, they are fluid like water and comparatively, they cannot be compared. Life is made of compromises and this aceto is a great compromise for an everyday use. I love its smell and Its rich and intense taste . I pour it on my salads or I make a warm vinaigrette with it to go with fish for example. If you make a reduction it will be perfect to accompany cheese.

Disapointing
After seeing the 5 star ratings, I ordered this balsamic vinegar. What a huge disappointment. My only assumption is that no one leaving a review had ever tasted the Alidoro 18 year old balsamic vinegar. I was looking for a cheaper alternative, but the Giusti Premio Aged Balsamic Vinegar was no better than the really cheap stuff in the grocery store. If you don't want to know how good a balsamic vinegar can be, continue to buy this product. But if you want to know how good balsamic vinegar can be, pay the extra money and buy the Alidoro. Of course, then you will be ruined and have to buy the more expensive stuff like me...
