Very, very sharp, and very well made
For years I have used a Sabatier chef's knife and been pretty happy with it. This Dick 1905 chef's knife is in another league though. It's surprisingly weighty, extremely well made and very, very sharp. It looks great too. It costs quite a bit more than my previous knife, but I think it's worth the extra and it will more than likely outlast me.
