I don’t cook it but eat it with fresh fruit and milk. If you do cook it, I’d follow the 2 to 1 ratio used for cooking oats but maybe skimp a bit on liquids to begin.

The specific expiration date on the cereal, of course, would have to be answered by the company shipping the cereal. My Alpen was shipped about 7 months ago and expires October 2016. If you want to go by that, expect the cereal to expire within about 9 or 10 months. (And it would still be good for a few months past expiration, anyway).
