I have been using Einkorn bread for years now and recently purchased a bread machine. I have used the whole wheat and all-purpose white flour for all recipes. Since it is so easy now to make 2#s of bread (5 minutes), my husband and I will never go back to store bread.

I found out about this Einkorn Whole Wheat Flour through a Keto Website I follow, Victoria's Keto Kitchen. Because it is an Ancient Grain Flour it is lower gluten, lower carb, and higher protein than most American refined flours. It does not spike blood sugar as quickly as modern wheat. Google it. I love making simple whole wheat honey rolls, and my own hot dog and hamburger buns. Great wheat flavor.

Whole grain einkorn has a low to moderate glycemic index (40–50), making it a better option than modern wheat for maintaining stable blood sugar levels. I’ve been eating 100% whole grain spelt, which also has a low glycemic index (40–55). My bread contains no sugar—just flour, water, butter, salt, powdered milk, and yeast. I wear a glucose monitor to track my blood sugar. I’m not diabetic, but I understand that glucose management is critical for maintaining a healthy weight and controlling cravings. My 100% pure spelt whole grain bread doesn’t cause blood sugar spikes. However, I had to try five different manufacturers to find real spelt that wasn’t being blended with other flours. I made my first loaf with 40% whole grain einkorn and 60% whole grain spelt. It felt like I was eating white bread—immediately I felt lethargic and experienced a sugar spike followed by a crash. I checked my glucose monitor, and sure enough, my levels spiked. This had a significant effect on my blood sugar. It appears the product was either blended or contaminated with white flour.

I am sensitive to gluten. No problem at all with this flour. I also bought the book “ einkorn recipes “ from Carla B. the founder of Jovial. My sourdough was a success and the no knead bread comes out beautifully each time! Very good product, I bought this flour several times already.
