Think it had been around awhile
This used to be our favorite when we lived on the west coast but it is hard to get in the midwest so took the chance and ordered it. Instead of having a nice dry white mold on the outside, it was gray and greasy. The salami itself had a bit of an airy taste so won't take the gamble again. Have been way more pleased with Molinari & Sons. Will go back to that.

Hard, Chewy, Moldy Salami Chub - The REAL Deal!
I grew up eating Galileo's Italian Dry Salami, as did my dad, as did his dad. It's been a family favorite for four generations. When some family members would move to areas where it wasn't readily available, all sorts of logistics between relatives would happen to get it shipped. Sending or receiving Galileo chubs to use as stocking stuffers was a norm during those years.Galileo's Italian Dry Salami is different from any other salami I've tried. It's a personal preference thing, but I don't find the softer, more fatty salami sold in most mid-west and eastern U.S. grocery delis as palatable. Even other brands of hard salami don't fill the bill for me. None that I've tried match the taste of Galileo's spice blend.After a recent move, we found ourselves again in a location where Galileo was not available in stores. Thanks to the internet, the logistics to get Galileo aren't nearly as complicated as when I was a child.If you're trying Galileo's (aka Gallo) salami for the first time, I recommend you make sure to stick with the original style of whole chubs with a full "bloom." The bloom is a white mold that develops on the outside of the casing as the salami cures. I agree with Galileo's claims that the bloom "locks in" the old-world flavor and moistness.Again, it's about preference. If you're looking for hard, chewy salami that you slice from a moldy chub, this is the real deal. If you want soft, fatty, pre-sliced salami, hit the deli.

Wouldn't order again
We can not find this here in the South so I bought online. It was very old and hard as a rock. Wouldn't buy again.

The BEST!
This is the best salame ever. I used to eat it all the time when I lived in Northern California. I was so happy to discover I could order it and have my favorite treat on the East Coast. My family and friends enjoyed it. I will have to order another so I don't have to share.
