Q: Can this lock stay open or remain latched open so you don’t always have to pull down the handle?

Yes this lock can be locked open

Q: How do you determine the correct backset. I am going to have to replace my entire Adams door mechanism.

The Adams Rite type door lock is not suitable for use on a wooden door.. the door would be weakened by the amount of material needed to be cut away to Fitbit in the door.. these are made for extruded aluminum store front Tyle doors.

Q: Is there a version of this lock that can be installed in a traditional door (metal or wood) replacing a regular deadbolt?

Not to my knowledge, other than a full length exit device.

I do not believe this would work on a wood door..
